Jimmy Crack Corn

roastedcorn.jpgI recently bought a tabletop grill and have been learning quite a bit, since I have never grilled before. I am a grill virgin. However, lately, I have discovered that I am addicted to grilled corn. With corn being in season and so cheap, I grill 4 or 5 (or 20) ears of corn every time I put something on the grill.

blackbeancornsalad.jpgThis past weekend, I wanted to do something besides grill the corn and eat it, so I decided to make a salad. I roasted 4 ears of corn and cut it off the cob, tossed it with some black beans, some roasted red peppers, some red onion, and pineapple salsa. I really like how it turned out and took some to my mother for Mother’s Day, who also loved it. She ate hers mixed with tortilla chips and lettuce, and I ate mine along with grilled chicken.

I am going to have to freeze a lot of corn this summer to feed my addiction after the season ends.

    I kept reading and thinking I was going to hear something really sad. I sat and braced myself for the “ax.” What a pleasure this was. What a wonderful ending. There are many fine points to this. One was really helping someone to feel more a part of things. Helping Hannah with a problem. #2 was that your daughter has to work hard for her money and doesn’t have a lot of it. It had to make her feel really good to share it. I hope things continue to go well here. This was just a delightful post. Congratulations to a fine daughter. Cheers to you.

    I don’t know how the wrong comment got put there!!! Sorry about that. I love this recipe and it sounds delicious. We don’t have really good corn yet up here in MN but when we do, this will be a nice change. The kids love corn on the cob but I’m not a huge fan of it. I hate the way it gets stuck in my teeth. This sounds great. I’m with your mom though, the chips with it sounds great.
